Receipes for ButterMilk Biscuits

ButterMilk Biscuits

2 1/2 cups self rising flour  2 teaspoons sugar  1/4 cup butter or shortening  3/4 to 1 cup buttermilk

Heat oven to 450 degrees. stir together flour and sugar with a fork or pastry cutter. Cut in butter until mixture is crumbly. Stir in buttermilk until dough leaves the side of bowl. (If dough is dry stir in 1-2 tablespoons of additional buttermilk).  On floured surface knead dough until just smooth. Roll dough until 1 1/2 inch thickness. Cut with a 2 1/2 inch biscuit cutter. Place on un-greased cookie sheet 1 inch apart for crusty sides and touching for softer sides.  Bake 10-12 minutes until golden brown.  Approx 12 biscuits.

Drop Biscuits

1 1/4th buttermilk

Do not knead dough. Drop by the spoonfuls 2 inches apart and bake.

Cheese and Garlic Biscuits

1 cup of buttermilk and 3/4 cup grated cheese. Do not knead dough, drop on cookie sheet by the spoonful and bake.  After the biscuits are done, brush with a mixture of butter and garlic powder.

Cinnamon Sugar Biscuits

Increase sugar to 1/2 cup and add 1/4 tsp of cinnamon to biscuit mixture, knead and place on cookie sheet and bake 10-12 minutes. Brush biscuits with butter and cinnamon mixture.    High Altitude 3500-6500 Heat oven to 425
